A little oil
4 small lamb chops
1/2 a bunch of asparagus
2 sprigs of fresh mint (about 16 leaves)
1 tsp sugar
1 tbsp red wine vinegar
Preheat your pan.
Add a little oil just to coat the bottom of the pan.
Add in the lamb chops and let sit for 2-3 minutes, or until they release from the bottom of the pan.
Turn the chops when they are ready, then add in the asparagus.
Cook for 3 more minutes, or until the chops/asparagus is cooked how you like it.
Meanwhile, make the mint sauce by combining the mint, vinegar and sugar and swishing around until the sugar is dissolved.
Serve and devour with glee 🙂
