TOASTED VEGAN BURRITOS…perfect for camping!


I’ve been doing quite a bit of camping this year, and as such, I have had to learn how to vegan-ize all of the classic campfire recipes…this one is out of the box, but I promise it’s way simpler than it looks! -white rice (cooks faster, cheaper)
-chopped veggies (easier to chop ahead of time)
-homestyle tortilla shells
-canned beans (or vegan chili for more flavor)
-avocado (optional)
-salsa/goddess salad dressing (optional)

-can opener
-plastic knives

1. Start a fire and let it heat up
2. Place desired amount of rice and doubled water in pot and place over fire (loose guideline: 1/2 cup rice per person for 2 burritos each); depending on heat of your fire, it will take anywhere from 20-60 minutes to fully cook
3. Steam vegetables by taking two equal-sized pieces of tinfoil and folding them over one another on the edges, creating a pouch. Then, add desired amount of vegetables and 1/2-1 cup of water. Then, close up the final side of the pouch and place by the coals of the fire, flipping after about 5-10 minutes
4. Once everything has cooked/steamed, assemble the burritos in the tortilla shells. Then, wrap them tightly in a new piece of tinfoil and, again, place on the coals of the fire. Cook for 5 minutes on each side and avoid placing directly in flames, as you don’t want to consume black/charred food (linked to cancer)
5. Remove after 10 minutes or so, cool down, and ENJOY!!
